Thelma was going to college as I think she was a sophmore or junior at school. She was at school in the 5th season where in one episode she moved into apartment with her classmates, including the guy who had Tarantula as a pet :D
But in the 6th season, Thelma seem to have quit college as she going to college or classes was never mentioned. I even watched the first episode of 6th season to see maybe she met Kieth at a college frat party. But Thelma said she met Kieth at the community dance center. So no mention of college.
I was surprise that Floroda did not push her to continue her education to get a degree. She seem to lay around playing house with Kieth the whole season.

Wasn't the underlying theme of the show was about a family working hard to escape the harshness of their environment and just when it looks like some triumphant moment is about to occur, then some tragedy befalls them?
So to answer the question, the GT writing team didn't want Thelma to graduate from college.

Seemed like when Florida returned, JJ was no longer a career man and Thelma was no longer in school

That seem to happen frequently in GT. Like when Thelma is about to marry a rich footbal player, the groom breaks his legs. Or when buying a house and being approved, the house end up being in city demolition zone.

It seem the phrase "starving artist" pretty much applied to JJ :D

JJ was teaching artist while trying to sell ‘Dyno-Man’. So he was still in the ad business. Thelma just seemed to quit school and get a part-time job!

He was hustling from home in season 6 unlike when he was going to an actual office in season 5. He was working under the table in season 6

I remember Fans criticizing Thelma's character in the 6th Season saying something like,"What happened to Thelma's dreams of becoming a Dancer and a Doctor in the 6th Season? In the 6th Season, she just became a lazy housewife who just sat around being Keith's wife! The episode where Michael meets Cindy outrageous Parents, she just stood next to Keith with a creepy, cultish looking smile, something the old Thelma wouldn't do!"
