I found a book in the library called Hispanics in Hollywood by Luis Reyes. My favorite guy got a mention.

Born and raised in New York City, Sierra began his career as a singer while in the Air Force. Sierra's first professional appearance was with the prestigious National Shakespeare Company, with whom he performed Macbeth and The Taming of the Shrew.

In 1969, after nearly ten years of working exclusively in New York theater, Sierra relocated to California to break into films and television. His transition to the West Coast proved beneficial, as he soon landed a role on The Flying Nun (1967-70) television series starring Sally Field. Sierra went on to appear in numerous television shows, including a recurring role as Julio Fuentes, Fred Sanford's Puerto Rican neighbor, on Sanford & Son (1972-77) and as a series regular on Barney Miller (1975-82) as Detective Chano. He starred in his own short-lived series AES Hudson Street (1978) and on Miami Vice (1984-89). He made regular guest appearances on episodic television series. His feature film credits include The Wrath of God (1972), The Towering Inferno (1974), The Prisoner of Zenda (1979), with Peter Sellers; The Trouble With Spies (1987), Deep Cover (1992), Hot Shots! Part Deux (1993), The Wonderful Ice Cream Suit (1998) and Vic (1999).

I had a dream last night that I was somewhere getting food, and at this spot there was Gregory Sierra. What I remember was that we chatted for a while.
