Yesterday I ate a Klondike Ice Cream Sandwich and I noticed that they lacked sugar and are not as sweet as they used to be and I'm wondering if Klondike Bars and ice cream sandwiches have changed their flavor these days? Because when my mom and I looked at the box there was no mention of the ice cream sandwiches being sugar free and they are not the light versions at all. I have sometimes eaten Klondike Bars and I hadn't noticed this until yesterday

Like so MANY things these days, "improvement" typically means "we've found a way to make it almost as good, at half the cost"
Personally I've always believed that the "new Coke" debacle was just a subterfuge to get the hard core coke drinkers taste confused while Coke changed from sugar to corn syrup.
One of those "well there is a faint difference everybody will notice, how can we distract them?" type things . They may have done something similar to Klondyke bars

I often add sugar/salt to stuff Im having because they have lowered both so much that it tastes like crap otherwise!!

Many times they add artificial sugars and unless one looked at the label, you wouldn't know. The sweeteners may taste different from what you are used to.

I've complained about pretzels in a separate thread, as an example. Pretzels are SUPPOSED to be salty. Otherwise they taste like what I'd think cardboard would taste like. (It's hard to add salt to them!)
Also, they've messed with Oreos in the past. At some point years ago someone probably complained about whatever fat they were using, so they changed to partially hydrogenated oil. Then that became a problem. On and on...
With Klondike, somebody probably complained about sugar content.

Yes Oreo shells were changed sometime in the late 80s..... Not as good at all.......
Yes I always make sure to ask for alot of salt when I order a hot pretzel!

More food preservatives are being added to extend product shelf life in the store's freezer.
