Are there any roles out there of recently deceased Gilbert Gottfried acting in his regular, non-stage voice?

I don't think he ever used his real voice on-camera. One of the few times he used it in public was from his stand-up comedy gigs where he would talk as a "normal person" during a bit.

Howard Stern aired an answering machine message that Gilbert left for Gary Dell'Abate using his real voice.

There is a documentary film about him called, appropriately, "Gilbert". You get to see him at home and on the move, interacting with family and going on road trips for gigs. He uses his regular voice at home and on camera quite a lot. And in this trailer at 0:38!:
