The argument that can be made is that Parsons just seemed far too much of a patrician WASP to be believable as their mother. Basically, her speech pattern was too “prim” and high brow for a working class show like Roseanne. Granted, she did often play working class midwestern women going all the way back to Bonnie & Clyde.
But still, don't you think that Shelley Winters actually looked more believable as Roseanne's mother let alone grandmother? Plus, Shelley and Estelle in real life, weren't that far apart in age to plausibly be mother and daughter. Estelle Parsons was born in 1927 and Shelley Winters was born in 1920.
