A "bun drop" is basically when a woman suddenly releases (https://tvtropes.org/pmwiki/pmwiki.php/Main/ShakingHerHairLoose) her long hair that has been tied up in a bun so that it hangs at full length.

Actually, she put it back into a bun, and that freaked him out again.
