How many people here liked the idea of Archie and Katherine as a couple? I personally didn't; I found their interactions to be just kinda flat and dull. It didn't have anything to do with how the actress portrayed the character - I just didn't find Katherine as a character to be that interesting and entertaining.
Archie himself didn't seem to be terribly upset over them parting ways (which seemed a bit odd to have happen off-screen after the writers spent a little over a few episodes building up their relationship) and I wouldn't have objected to Archie dating someone else afterwards, as long as his love interest had good chemistry with him and was fun to have around on the show, but he himself didn't seem all that interested in dating even as more time passed after losing Edith.
Guess that just goes to show that despite how he often treated her and how she had good reason to leave him a few times (the brief affair with the waitress, him forging her name to mortgage the house and get the bar), she really was the one true love of his life.
