In the episode called "Raygin' Bulls" Arthur reminisces to Carrie about how he lost her name "Simone" to her uncle during a poker game. In the flashbacks, Carrie looks to be about 7 years old. So how can a child that age not remember that her name is really Simone? That's a huge deal. She looked like she was of school age, so her teacher would also have to change her name, legal papers would have to be filed, etc. But most of all, how in the world could a seven year old not remember their real name? Dumb episode all around. Plus, Ray Barone is in this episode and he tells Doug that he's been at his mother's house. I thought the mom lives in LI so why is Ray at a supermarket in Rego Park, Queens? I hate this episode.

Beyond stupid!
I also really dislike the other episode that Ray Barone is in called "Rayny Day." Ray's mother Marie is so annoying! And Ray's constant whining really grates on the nerves.

Well there's lots of inconsistencies throughout the run of The King Of Queens. Like how Doug and Carrie met for example and so on.

Also, very annoying how Richie and Sarah just disappeared with no explanation.

I'm with you: I hate it when characters disappear with no explanation. At least give us a line! "Ever since Richie moved to Philly, I've been feeling depressed." How hard is that?
