I've always been curious as to what the upstairs portion of the house looked like. I guessing there were 2 bedrooms, a bathroom and a hallway basically, BUT some episodes indicate a strange lay out up there lol

In the earthquake episode....Fred is trying to sell the house and he hastily takes a couple upstairs and gives them a rushed tour and you hear him opening and closing at least FIVE or SIX doors! You can hear him announce "bedroom!", "bathroom!", then the audience laughter drowns out some of what he ways but you can hear him say, "sun room!" and it SOUNDS like "dinning room!" So I'm wondering do you think the upstairs could have been BIG?

Yes, and I've been watching episodes of Sanford and they eventually show MOST of the whole upstairs area.
