Am I going crazy?

I vaguely remember from when I was very small a segment that scared the crap outta me. It had something (or I think) to do with a vampire rabbit with red eyes.

Am I remembering this correctly? Am I maybe getting this mixed up with the Chupacabra segment?

I think you are mixing it up with the Cupacabra segment. Don't think there has ever been anything regarding a vampire rabbit. Sounds more like something along the lines of Twilight Zone or Outer Limits.

I would say maybe a yeti or UFO segment, but when I read this, the first thing that came to mind was the children's book Bunnicula.

I know there were rabbits and goats in the Chupacabra segment that's why I was thinking I may have been mixing it up but wasn't sure.
