I remember on Hollywood Squares, Jm J. Bullock, Joan Rivers and announcer Shadoe Stevens filling in.
TPIR on NBC had Merv Griffin, Arlene Francis and even Don Pardo filling in for Bill Cullen. on ABC, Johnny Gilbert and Jack Clark did it too.(Edit: Jack Clark filled in on the NBC version too.)

Concentration has had guest hosts while Hugh Downs was on vacation or on assignment for The Today Show. Bob Clayton frequently hosted and that's probably what earned him the permanent host job when Downs left. Also filling in for Downs was New York sportscaster Bill Mazer. It led to him hosting the short-lived Merv Griffin game show Reach for the Stars in 1967.

There have also been some instances where the host plays as a celebrity guest. On the original You Don't Say!, Tom Kennedy played the game and his brother Jack Narz hosted. In September, 1968, Snap Judgement and Match Game had hosts Ed McMahon and Gene Rayburn as guest celebrities on their shows while Rayburn hosted Snap Judgement and McMahon Match Game.

In the 70s, announcer Mike Darrow subbed for Art James on the Who, What or Where Game when James was ill. When Bob Barker was recovering from injuries after being hoisted by a Samoan on The Price is Right, Dennis James subbed for three episodes. On the ABC version of Passwod, host Allen Ludden got to play the for a week and Monty Hall hosted.

Those are some of the shows that used guest hosts.

Geoff Edwards got his big break filling in for Monty, and Dennis's stint filling in is what got him the nighttime TPIR.

Beat the Clock with Bud Collyer in the '50s had John Reed King, Frank Wayne, Win Elliott, and Sonny Fox as guest-hosts.

Mark Goodson sub-hosted for 2 eps. of To Tell The Truth in 1991 when Alex Trebek rushed to the hospital when his wife had a baby.

And that reminds me, Alex Trebek (Jeopardy) and Pat Sajak (Wheel of Fortune) switched shows one April Fool's Day.

I remember seeing Art James fill in for Downs on "Concentration" in the summer of '65. Art also swapped places with Gene Rayburn on the NBC '60s incarnation of "Match Game" also in '65.

My grandmom watched Price is Right and one time Jack Narz hosted because Bill Cullen went on a lengthy vacation. As I said earlier, Jack Clark filled in for Cullen too.

Concentration has had guest hosts while Hugh Downs was on vacation or on assignment for The Today Show. Art James and Bob Clayton did it too. And Mel Brandt, well known for being the announcer for the soap The Doctors filled in for Johnny Olsen as announcer on Match Game once. At least according to IMDB
