Today, I ate some vegan cupcakes at my work and I liked them!

Two years ago, I tried the Daniel Fast but gave up since it was difficult. But who here is vegetarian/vegan because I may have a meatless Tuesday after Memorial Day.

I've been a vegetarian for about 2 years. I tried to be a vegan but giving up cheese was just too hard and cheese substitutes are way too expensive.

The Bubba veggie burgers are awesome and they're vegan.

I am trying to eat up to a maximum of four ounce of meat a day.
I recently found out that some Totino's Pizza have cheese substitutes.

I gave up red meat six years ago. Sometimes I get tempted to eat pork rinds; they are zero carb and crunchy, which I like. But I don't ever; pigs are too cute-I just can't eat them anymore. And cows provideso many yummy dairy products-I can't eat them either--my conscience would make me feel like sh**

Chicken and turkey are my sticking points. Not ready to give them up. And dairy and fish...NEVER!

All this being said though, I think that we as a country eat WAAAY too much meat. Me personally I'm trying to shift to getting more of my protein from nuts AND eating more low carb veggies and berries.

The best frozen meals are "Amy's" and they are ALL either vegetarian or vegan. Very tasty!

Amy's products are tasty, but they have WAY TOO many carbs for me. I eat low(er) carb - maybe 60-80 net grams a day to keep my blood sugar close to normal. Mostly nuts, seeds, berries, fatty fish, fowl, garden veggies and yogurt.

Vegan/vegetarian eating can be a good way to eat when you're non-diabetic.

"Amy's" also has a "light and lean" product line. Maybe they have less carbs? My favorite is the black beans and tamale, the spinach lasagna, the cheese enchilada, roasted polenta and the macaroni and cheese meals.

I never saw the light and lean line. I'll look for them and check out the carb count. Usually light and lean often translates into almost zero fat but mucho carbs. But let me see...I can tolerate a small amount of beans...it's the grain and rice that does me in.

When you're diabetic or pre-diabetic most carbs, outside of salad vegetables and berries are generally the villain, not fat. High quality fat, like avocados, nuts, olive oil and seeds actually helps me keep a stable weight and avoid the horrible hunger surges I got before closely watching carbs. Weight Watchers dinners were wrecking havoc on me...not a lot of calories but a TREMENDOUS amt of carbs

Truth! I'm also a diabetic, and it's hard to eat light and avoid carbs. My former doctor once told me that I was one of the few patients who he would rather see eat 2 bacon cheeseburgers than 1 doughnut, LOL. I was a pescatarian (only meat I ate was fish) for a little over a year. I've since reintroduced chicken and small amounts of red meat into my diet.

While the jury is out on eating tons of saturated fat, when you're a diabetic virtually anything is better than scarfing down fast acting (& Un-nutritious) carbs like doughnuts, cookies, pastries, chips, fries & regular soda. If you're a diabetic who still makes insulin, it often takes TONS of it to offset the mega-carbs in junk food. Insulin also abets fat storage. FAT is not what makes people fat it's the tons of carbs mindlessly eaten and the gushers of insulin. ..AND.... If you wanna see cancer cells grow up big and strong...feed them SUGAR!!! Sugar, regardless of its disguise =s poison.

When I scaled back my carbs to 10-15% of my caloric intake, I began to feel much more energetic and my polyphagia stopped.

I tried Amy's Burritos but find them too harsh a taste for my palate.
