But yeah, where were Michael and Kate, Dorothy's kids? And where was Dorothy's sister Gloria?

That happens all the time in sitcoms. People say the same thing about Janet's Threes Company wedding. Where was her family? The network would have to pay all those actors. Its much cheaper to have unknown actors to fill the seats.
