Okay, now I'm not saying Bob Hartley has nothing going for him - he's a professional guy, very nice guy. But Emily:
1. Is about eight years younger than Bob;
2. Is outgoing and more sociable than Bob;
3. Is smarter than Bob (which everyone knew even before they took IQ tests); and,
4. Looks like Suzanne Pleshette.
So what does Bob have that makes Emily say, "That's the one I want"?

Bob is the perfect husband. He is a nice man, he's stable, has a good job. He loves Emily, doesn't fool around with other women. He's easy to talk to. And although he isn't a hotty, he by far isn't ugly either. He's a very average looking man, if he didn't have Emily he could get other women but women wouldn't be after him in droves like if he was a really good looking guy! So therefore, Bob is very good husband material. :)
I totally see where Emily would pick him! ;)

Very well stated, bonniegirl62!
The only thing I'd add is that Bob is so funny in that straight-man, react-to-the-chaos/absurdity-around-him way, that Emily undoubtedly notices his sense of humor and appreciates that.
Also, they equally get off great lines about each other or situations they encounter. Being able to often enjoy a laugh with her husband is probably attractive to Emily.
