portrayed on TV it seemed like it was in the middle of nowhere. So it was surprising to see them have so many customers in that type of environment

Phoenix is a big city. In the movie version Alice Doesn't Live Here Anymore, the diner is busier and is set in Tucson.

You have to remember it was a hot spot for truck drivers too. They kept the place in business and many came to see Flo.
