This is kind of a tough one. I'm frankly stumped to find an answer. Some of the shorter run shows like Gilligan's Island, or the Munsters or the Addams Family were pretty consistent to the end, but I'm talking about shows that lasted five seasons or more.
Can anyone else think of any?
I'll offer M*A*S*H, because in spite of popular opinion (and maybe helped by the fact that it was a very short season), I think the last year was a bit better than the previous year.

The Golden Girls
Season 7 was awesome! Season 6 was terrible. The whole Dorothy almost re-marrying Stan and Miles being in the witness protection program just made me wonder what was going through the writers minds!!

I was about to mention season seven finishing strong as well for the Golden Girls TV series. The show looked good, they girls looked good. It was all good.
I think even Cheers had a strong, final season as well. The show even finished in 8th place for the final season.

Three's Company was still good in it's 8th season, there were no cast changes and John Ritter even won an Emmy for that season.

the office rebounded with a pretty good 9th and final season after season 8 being just plain awful and while others may disagree i think that different strokes was alot better in its 8th and last year than it was in season 7

I did like the season 8 of DS as well. I did like the new set as well.

I liked it too, it felt more 1980's and even Arnold and Mr. Drummond would wear Cosby type sweaters but there was a price to it and that was Willis' jery curl he borrowed from DeBarge.
I'll say The Odd Couple because Season 1 in general was easily weaker than the next 4, which is just the opposite of what you would expect from any hit series.

30 Rock's final season was one of its best.
