If one were to turn to the Internet for answers, one might find Wikipedia has a few answers relating from season 5:
◾In Cheers episode "It's a Wonderful Wife", the bar celebrates Frasier's birthday in late February.
◾In one episode, it is established he was born in March 1952.
Taking this into account and finding that Kelsey Grammer's birthday is Feb 21st, I think Feb 21st dates Frasier's birthday. It would be smart for the writers to do that so that they never get confused as to when Frasier's birthday was and it could be a way to celebrate Kelsey's birthday by having a birthday episode around his actual birthday.
Any thoughts???

There were at least two Frasier episodes that celebrated or mentioned Frasier's birthday and if I remember correctly, they were both at different times of the year (I think). The obvious one is "Back Talk" when he threw his back out blowing out his birthday cupcake. That episode aired in early December and since the very next episode was "The Fight Before Christmas" and it picked up where the other left off, then we can assume it's fairly "real time," which puts Frasier's birthday in November or December.
I'll have to think about it, but I think I remember noticing another episode that mentioned his birthday and it was a totally different time of year though. Anyone remember which one that is?

OH! I know! Another episode that mentioned his birthday was the one where he was going through that sort of mid-life crisis and was flirting with that girl in the clothing store. I can't remember for sure which episode that was, but it was early in the--- Wait-- sorry-- thinking while I'm writing-- it was "Fortysomething" and that episode took place in March. Not sure if they mentioned if it was actually his birthday in that episode or if he was just having an age crisis, but that one was in March.
I think there's at least one more that mentions his birthday too. I'll have to keep thinking.

And then there was "Visions of Daphne/Shutout in Seattle" where Roz is catalogue shopping for a gift and Frasier asks if it's for a "honey voiced radio psychiatrist whose birthday's right around the corner." Turns out it's that dragon statue for Niles, but still those episodes are in May, which is "right around the corner" for neither December or March. Or February, for that matter.
I still think there's another episode that alludes to his birthday though. I'll keep thinking.
