Hey y'all, I'm going to make meatloaf for the first time soon, does anyone have any good recipes and/or advice?

i like to use a lot of finely chopped onion (1 large), 1-1/2 pounds lean ground beef, a package of onion soup mix (even better is beefy onion), handful of breadcrumbs, half cup of parmesan, 1 egg, tbsp minced garlic, dash of italian herbs (your pick of oregano/basil/parsley), dash of salt & pepper, shot of worcestershire sauce. Mix evenly but do not abuse the meat - just enough to mix it. put in a loaf pan, leave a channel in one corner to drain fat later.

The topping is a finely contested affair - some people like to smother it in ketchup, I find that disgusting. I prefer to top it with home made beef gravy with maybe a shot of tomato paste in it - if someone wants to ruin it with ketchup, let them do so on their own plate.

Bake covered at 350 for an hour, uncover and bake for another 15 minutes or until center is 160 degrees. drain grease as necessary.

sorry about the rough measurements - I usually don't bother to actually measure anything.

I have nothing against Meatloaf the singer, I merely put (the food) in the header so people wouldn't get confused. Thanks for your tips though, sounds good!

My secret ingredient is Lipton Onion Soup Mix. It really flavors up a meatloaf!

When I read this thread title I thought of the Group Meatloaf --- AH MAN!!

I love meatloaf. With that sauce all over it (RED) -- mmmmmmmmmmmmm

When I could stand in kitchen for a long time to cook, I made a lot of meatloafs...combined beef and turkey and sometimes veal, love love love meatloaf, mashed potatoes and gravey, but don't eat this anymore. As a younger person oh yes.

I LOVE meatloaf

My recipe

2# ground beef or turkey
An egg
Chopped onions
Very finely chopped carrots
Quaker oats
BBQ sauce or ketchup ( add some into the meat mixture and spread some on the top )
Salt and pepper

Mix all this together and bake , I don't really use measurements , I just go by sight and feel !

Also instead of Quaker oats I have used canned bread crumbs or crumbled saltines, but I've found Quaker oats to work the best ! ;)

meatloafs are really easy to put together after doing so many, it's all easy. I use to use some cracker meal but so many things can work.

Yes! Mashed potatoes and gravy with meatloaf ! Even though I cook my meatloaf with BBQ sauce or ketchup on top after it cooks and sinks into the meat the gravy on top is fine, doesn't clash! :)

Besides mashed potatoes and gravy, I sometimes serve long grain wild rice or baked beans go great with meatloaf too ! ;)

I've used McCormack's meatloaf seasoning for my meatloaf before ! ;) On the same line as the Lipton onion soup mix ! :)

Yeah, the oatmeal makes it great ! Mustard? Wow, I never heard of mustard in meatloaf, I'll give it a try sometime! :):wave:
