Ok, I need your guys help. Has there been a sitcom from recent memory where as two roommates have dated and the dated turned out successful? The reason I ask is that I am intested in dating one of my roommates and there is an obvious mutual attraction but she only wants to be friends. She mentioned that there has never been a sitcom that she could remember where two roomates dated successfully?

I can't believe I'm admitting that I know this, but...

"Saved by the Bell: The College Years". Zack and Kelly shared a suite with four other roommates. They dated, and wound up getting married.

That said, I'm not sure that citing "Saved by the Bell" is going to help your cause with your roommate.
