It may be a horrible tease or maybe it's a sign of the looming Apocalypse, but the first season of Heat is up for sale at Amazon.
It's currently temp. out of stock, so I looked around briefly and Best Buy also has it listed, but it also appears out of stock.
Apparently, it released on Aug 30th.
Also while surfing around, I found someone saying they found season one in the $5 bin at Walmart. That kind of irks me. They'll give shelf space to all that other garbage, but Heat goes in the bin?!?!
Yeah, hating you even more now Walmart. I didn't think that was even possible....

Bill Gillespie, a southern white small-town sheriff and a black detective must put aside racial animosity to solve crimes in the Mississippi hamlet. A tense drama inspired by the Oscar-winning film, which was based on John Ball's 1965 critically acclaimed novel of the same name. The series provided an honest and hopeful look at life in the new south.

Earlier titles already available, with limited distribution at first but now more widespread, included In the Heat of the Night - The 1st Season, where the show's rookie season only included the pilot telefilm and 6 regular episodes. Today Amazon.com (see button link below) has begun listing a new TGG title, however: In the Heat of the Night - 24 Hour Television Marathon, an 8-DVD collection priced at just $29.96 SRP. It will be available soon, on October 23rd, and the package art can be seen below. The episode list included can be found in the studio-supplied description quoted above in italics.
