I saw the first espoide of Jeannie a few days ago when they meet for the first time. Right before Tony picks up the bottle, he has in the sand written out "SOS". I know that it means help, but what do those words actually spell out?

Some would say it stands for "Save Our Survivors" or for "Save Our Souls" but the real SOS doesn't stand for anything. In Morse Code, SOS is the easiest and fastest way for you to signal people that you're in trouble. S is 3 dots and O is 3 dashes.
