LOL, actually I was watching the season 11 episode last week when the Jeffersons went to Atlantic City and George told Florence...."we are not taking you to London next year"
So I feel that was a small hint by the writers that a trip for London was going to be the following season but they were not planning on the show being cancelled
Just my opinion.

i think it would have been fun
the Jeffersons literally could have went on forever if they kept writing new scenarios for George to get himself in trouble.

And stay away from eps focusing on Tom and Helen. The Tom and Helen characters were only supposed to be apart of a story line that was about
Lionel, Florence, George or Weezy

i think the show ended the right time 11 years is long enough they should have did maybe a 12th season maybe have 13 episodes just to make people happy the last episode could have dealt with death maybe george gets killed or seriously injured badly from trying to save a another mans life from a group of gangsters trying to rob him it could have been a heart warming episode final, i think a spinoff of lionel and jenny as a rich married couple would have made a great spinoff could have lasted atleast a few seasons if people tuned in to watch it.
