Kind-hearted Archie agrees to have a Sabbath dinner for Stephanie, but conflicts appear when one Jewish guest brings his Gentile girlfriend.
I didn't like the way Archie criticized Edith for inviting the guy's mother and accidentally starting a conflict. And then, our gal Edith is the one who patches everything up.

Edith's final appearance felt like a transition episode to me. Passing the show baton from Archie and Edith to Archie and Murray.
But the Murray character really never found consistent footing and was relegated to being a sidekick. And by the second season he probably slipped to 3rd behind a lovely and suddenly grown up Danielle Brisebois who would briefly become Uncle Arch's main foil. It's a shame Martin Balsam only lasted one more year.

Did the producers know this was Edith’s final episode? Seems kind of anticlimactic, if they did.

No, it wasn't until they began planning for season 2 that they knew Edith was done for good.
