my mother made some fajtas out of leftover thanksgiving turkey and they were sooo good i was just wondering if anyone else here has ever tried them?

I can see why those might be pretty good. Never thought of it, but it's an interesting (and I'm sure a tasty) idea.

We are going to have Turkey Enchiladas this Sunday. Mom makes them by
mixing leftover Turkey meat with Cream Of Chicken Soup, Salsa and Sour
Cream and then puts the filling into Flour Tortillas, tops them with Cheddar
and Monterey Jack Cheeses and bakes it in the oven until the cheese
bubbles. She serves them garnished with Tomatoes and Green Onions.

By your description those turkey enchiladas would taste awesome and should be on the Taco Bell menu.

I've had chicken fajitas, so I think turkey would be just as good.

I've had chicken fajatas which were good.
I've had beef fajatas which I didn't care for.
I've never had turkey fajatas.

yes my mom also made some really yummy fajtas on thanx giving....my mom is a genius cook
