Well I should probably know this one. But I can't find a video on it without a name of course so here goes. It was an interesting segment.

Bottom line is a girl goes missing. No one knows why if she was kidnapped/killed/voluntary or anything like that. Apparently there were two sightings of her. One I remember vividly of an elderly couple from the girls hometown happening to come across a restaurant in which she was supposedly a waitress. They spotted her, and she motioned to her boss that she didn't want to serve that couple. Which one is this?

A middle aged woman is murdered. I think the main suspect was a spanish man who she worked for that owed her a lot of money and kept avoiding giving her cheques. He was interviewed in the segment and while he sounded articulate everything pointed to him being the killer

The second one sounds like the Joan Jeffries segment. I recall her boss was of Indian or Pakistani descent, and he took out a pretty sizeable life insurance policy on her before her death. They were last seen together at a restaurant. Does that sound familiar?

Wiseguy is correct and the first one is the Paul Ferrell case. It first aired on the short lived UM spin-off Final Appeal but has also aired on the revamped UM on Spike. The woman he was convicted of killing was Cathy Ford. Her body has never been found. Here's a thread with some more info on the case:
