You are probably correct that Jack had dated over fifty girls throughout the series. However, as far as the exact number, your guess is as good as mine! 1. No clue as to why Chrissy got dumber. I think that happens in a lot of shows with the "ditzy" character. People get such a kick out of their ditziness that the writers just go further and further until they just go too far and the viewers get sick of it.

3. I actually think probably one of the prettiest girls Jack dated was the one that played the therapist in Hearing is Believing. There were quite a few pretty ones, though. I will say that I think he ended up with one of the most annoying/boring ones (Vicki). Shame. Jack deserved better.
