I remember watching an episode where a mexican or latin couple were being chased by gunman while driving in their car. The girl was shot, but the boyfriend survived. This case ring a bell?

I'm also looking for a case dealing with a creepy truck driver in the southwest. I think the guy just stared, and never talked.

Last but not least, a case where a couple were murdered, and I believe they were placed in boxes.

I'm guessing that the truck driver you are referring to was Devon Williams. He disappeared in 1995, but his remains were later found. To my knowledge, the cause of death has never been determined.

Do you have any additional details about the other two cases? Was the girl in the first case fatally shot? I'm trying to remember that case, as well as the case of the murdered couple. It's possible that either of those cases were featured on a different show, instead of on UM.

Are you talking about the couple that was murdered, dissected and placed in an ice box in 1965?

I just remember the mexican/latino case being sad. It might of happened in Texas. Any gunmen stories with mexicans or latins spring to mind?

Actually I think the box case is a different one than the one I'm talking about.

This couple was playing either a card game with a few friends at night, and then they left, and not long after that someone killed them both. I remember the girlfriend having red or orange hair.

I remember the case you are talking about, but can't remember the names of the individuals. As I recall, the man and woman had been playing cards with some friends. The two were having an affair. I can't remember if one or both were married to others, or just involved in relationships with others. Their car was found on an out-of-the-way dirt road and their bodies were found separately, I believe. The woman's, I think, was found in or underneath a cardboard box somewhere. I don't think it has ever been solved.

I've seen segments involving gunmen pursuing people via an automobile, but I can't think of any UM case that is consistent with your description.

If anything, there was a segment about the murder of a Washington (state) couple who had played a fantasy game with another couple prior to their deaths. The murder victims in that case were Michael Johnston and Rochelle Robinson. They were murdered in June 1994. To date, no one has ever been charged with the double homicide.

The case is listed at the UM official site (unsolved.com).

That's definitely the one I was thinking of, Kane. Not sure about the original poster. This is another one of those where UM tried to make a huge deal about how they had been playing that fantasy game and so "the occult" was somehow involved in their murder.
