When Chrissy's mother spent the night, why didn't the girls just tell her that Jack was a friend who was having his apartment painted and couldn't stand the fumes or something like that, and he was going to crash on their couch and cook them breakfast in the morning?

Exactly, all that hiding sh*t made no sense at all, especially since Chrissy was supposed to be a grown a$$ woman in her mid 20's-lol

But, you also have to remember that Chrissy's parents were deeply religious, too.

Also remember that this was taped in the late 70s. Such a situation wasn't well seen at the time. Her parents' reaction would've been the same as Stanley's reaction: It's unacceptable!
