In the "Out of This World" episode in Season 5 (Peter and Bobby are convinced that they have spotted a UFO), in the scene with Carol taking pictures of the bowl of fruit in the family room near the beginning of the episode, there is strange "echo"-like audio when Carol and Alice speak. I've noticed this on the DVD as well as when this episode is run on TV in syndication. Anyone else notice this strange audio?

I don't remember, but when I read this thread title I thought about that totally unrealistic, dynamic sound effect Greg was getting from the little pipe whistle that he was using to fool the boys with.
The echo could have been caused by a number of things. For example, the sound engineer accidentally knocked the echo lever up to high when he was reaching for his coffee, and nobody caught it until the master was done. Or, maybe the sound dropped during that scene, they didn't discover it until later, and the echoey result was the best they could create from what they had to work with.

I heard that the very first time during its first run. It always annoyed me and I wondered what that was.

I can picture one of Schwartz's assistants on the phone with the head sound guy:
"Well, that's not my problem, is it? We can't just bring Florence and Ann back in to redo the scene, can we. They've already gone home for the weekend. What? Well, maybe you should have thought about that before now. How? I don't care, just get it fixed!"

The Brady Bunch was filmed in a studio with a sound stage, which have a big echo. The problem simply lies with bad sound editing.

But surely if all studios had an echo they wouldn't film in them. Doesn't make sense.

I remember noticing the echo effect in the episode in which the Bradys receive a pool table form Mike's boss (played by Jim Backus, who had gone from being a gold prospector near the Grand Canyon in Season 4 to being Mike's boss in season 5).
In the scenes in the garage with the kids, I remember hearing the echo like crazy, although I don't remember hearing the echo in the scenes which featured the adults in the garage.
I remember that echo from the original broadcast... I don't think I noticed it in the other episodes mentioned above. I just remember it distinctly from the pool table episode, and in all of its reruns.
