Has anyone made chocolate truffles before? I made some lastnight with margarine [I ran out of unsalted butter] and they taste great. Youre supposed to roll them into balls after its firm and when I did lastnight meangya it looked like I went to the bathroom and wiped with my hands! I had chocolate allllll over and my balls were all lumpy and ugh. I wonder if the margine made a difference? As you can see, I do a lot of wrong things when it comes to baking :lol:

When I looked up truffle tips earlier, all the recipes didnt even include butter-- just chocolate and heavy cream! Damn you Ghiradelli :cuss:!!

Breaking news!! I did some more research and all the sites told me DIFFERENTLY from the Ghiradelli bag. Ghiradelli told me to put them covered, in the fridge until firm [2 hours], then roll them up. Online I read to put them uncovered in the fridge anywhere from 30-60 minutes that way theyre not too firm :mad: So now Im just remelting them a bit and pouring it over ice cream. It forms a thin hard shell and just :drool:

:lol: Good thinking! Actually, I bought a bunch of baking stuff for new truffles last night. Rum extract, raspberry extract, coconut, crushed nuts, and mint. I plan on getting creative :D. And if they dont come out right Im gonna fling everything on the walls.
