In the "Perfume Salesmen" June tells Ward she's going to make 'chopped egg sandwiches.' What is a chopped egg sandwich? Does anyone have a recipe for chopped egg sandwich? Thanks.

Also if you have any recipes for the foods June made or any recipes for foods the players ate on LITB I'd appreciate receiving those recipes or at least the titles. I'm fascinated with the foods fictional TV characters eat and 50s recipes. Thanks for your help.

Hi, folks. I spent a sleepless night wondering what in the world a "chopped egg sandwich" could be. In a telephone conversation with a friend this morning I was told a "chopped egg sandwich" is similar to an "egg salad sandwich." Here's the recipe:

CHOPPED EGG SANDWICH

3 - 4 hard boiled eggs, peeled and chopped into pea-sized bits
1/3 - 1/2 c. commercial mayonnaise
8 slices bread, buttered

In large bowl, blend egg and mayonnaise together thoroughly. Season with salt and pepper. Spread 1 - 2 Tbsp. of egg mixture on slice of bread. Top with additional slice of bread. Slice diagonally and serve. Makes 4 sandwiches.

The basic sandwich becomes an "egg salad sandwich" with the addition of lettuce leaves, chopped celery, chopped onion, and/or chopped peppers. Sweet pickle relish, capers, or prepared mustard may also be added.

A few chopped olives can be chopped and added to the basic egg/mayonnaise mixture. The sandwich is then known as an EGG AND OLIVE SANDWICH.

The EGG AND OLIVE SANDWICH was a popular offering in ladies' lunchrooms during the fifties. Ladies' lunchrooms were usually found in large department stores and offered weary shoppers dainty sandwiches and ladylike dishes. Diners were waited on by mature women in crisp dark uniforms and frilly aprons and caps. The most substantial dish one would find in a ladies' lunchroom was a very small serving of macaroni and cheese. Pretty pastries and hot tea were in ample supply, of course. I like to think June was familiar with the ladies' lunchroom.

There HHMMM good. Egg salad sandwiches. Yes When I was a child many department stores had lunch counters where one could stop and get a bit to eat. You would meet people you knew. Now I guess due to health regulations you can't mix food with merchandise. Oh how I wish they would come back.

I didn't know that mixing merchandise and food was the reason ladies' lunchrooms died. Seems logical.

I would have suspected ladies' lunchrooms died because 1) after reading Betty Friedan's "Feminine Mystique" women of the 60s didn't want anything to do with being traditional "ladies" and ladies' lunchrooms became a quaint, old-fashioned notion, 2) women began working in the mid 60s and there weren't enough downtown lady shoppers to warrant ladies' lunchrooms, and 3) fast foods were too much competition for small downtown eateries, restaurants, diners, and lunchrooms.

Department store lunch counters were wonderful! You sat on a stool at a counter and ordered from a menu sheathed in a heavy plastic protector while all about you people went about their shopping! It was wonderful. Typical menu offerings at a lunch counter were Cokes (served in real honest to goodness glasses rather than a paper cups), hot dogs, hamburgers, toasted cheese sandwiches, french fries, potato chips, pickle chips, egg salad sandwiches, hot roast beef sandwiches, milkshakes, and fruit pies a la mode!
