long story short, I am looking for the info of the song name, composer info etc of the closing music or opening w/o the voice over.
When I listen to the clips I have, it sounds like the peice doesnt end there and I am really interested in hearing what the selection came from and I have not been able to find out any info on it

That is not as simple a question as it might seem.
You can get quite a bit of information here:

but their info is not complete. O&H had at least four (maybe more!) closing themes. The familiar jazz piano theme was the "Malt Shop Blues"; there was a big-band tune called "Mary I'm in Love with You" (sometimes heard in a full orchestral version). Plus there was a more rock-oriented closing theme, and at least one more jazz piano styled closing that was not the same as the MSB.
The original opening theme was based on the theme for the radio show, slightly altered (probably to avoid paying royalties to the radio theme composer). The little waltz ditty that is sometimes heard over the opening credits seems to exist only in shows that were syndicated for local re-broadcast; I don't think that theme was ever used on the show's original runs, but I can't say for sure.
