Why did the actor who played Minkus leave? Did he want to or did the writers want him to leave? Or was it something else that lead to his departure from the show?

I don't know if they've ever given a reason why.

He looked to young to be starting 7th Grade.

The network wanted them to mature quicker , and Keeping Lee on the show would not work.

Yeah, they said on the commentary on the DVD that Lee was really talented and did everything very well. So the reason that he wasn't on anymore probably had nothing to do with the actor. After all, they did bring him back for the graduation ep. :)
