what caused L&S to plummet so badly in the 79-80 season, whereas it was #1 in the 78-79 season. I can't think of any other #1 series who fell so drastically the next season

that is strange, since L&S was #1 while Waltons were past their prime, and then L&S moves up against Waltons and gets trampled.
