There are a few child actors out there who you might have saw and thought that they will be around for a long time but after their one hit they left the business.
These are the few that I am familiar with. If you know of any more please add:
Danny Lloyd - Stanley Kubrick's The Shining (1980)

Danny Lloyd played "Danny Torrance" in The Shining. Kubrick had picked him due to his level of concentration great for that of a 6 year old.
After The Shining, Danny appeared in one television movie and left acting after that.
Rochelle Davis - The Crow (1994)

Rochelle Davis played "Sarah", the tomboyish girl who befriended "Eric Draven", Brandon Lee.
After Brandon Lee's accident on the set of the film, it is said that it devastated Rochelle so much that she left the business and has never worked again on screen.
Hal Scardino - The Indian In The Cupboard (1995)

Hal Scardino won the audition for the role of Omri in The Indian In The Cupboard.
After this one, he appeared a one year later in Meryl Streep's Marvin's Room and left acting after that.
Hatty Jones - Madeline (1998)

Hatty Jones got the part of "Madeline" over the 1000s of girls who auditioned for the 1998 live adaptation Madeline.
She left the business after her only starring role.

3 I can think of so far -
Cary Guffey - actually, he only had 1 big movie "Close Encounters of the Third Kind". He was Barry.
Oliver Robins - best known as Robbie in the Poltergeist movies
Jonathan Lipnicki - Jerry Macguire & Stuart Little
Well, I can't say Jonathan has totally disappeared. I just saw him on some show called 50 Child Stars all grown up.
I mentioned this first one in another thread a few days ago.
Carrie Henn appeared as Newt in Aliens and quit the biz shortly after.
Jake Lloyd appeared in a handful of movies and TV shows before starring in Star Wars Epsiode 1 The Phantom Menace as young Annakin Skywalker.
To this day, he has never appeared in anything else, and according to the IMDB is currently a college student in Chicago.

Most of the kids in the Home Alone movies - the siblings/cousins of Kevin (Macauley Culkin). Of course, the notable exception is Macauley's brother, Kieran (cousin Fuller).
Michael Oliver - "Junior", the troublemaking adopted son of John Ritter in the Problem Child movies.
Justin Henry - Dustin Hoffman and Meryl Streep's son in Kramer Vs. Kramer. I think he did appear as himself in a making-of featurette on that movie's DVD.
Austin O'Brien - He played Vada's love interest in My Girl 2, and also appeared in Last Action Hero.

From Home Alone I remember Michael Moronna (the redhead) was in them. He went on to The Adventures of Pete & Pete in the 90s. He hasn't done anything in 4 years.

Ivyann Schwann was the little girl in Problem Child 2. I think she was also in Parenthood.

Come to think of it, most of the kids from Harriet the Spy (1996) haven't done much since then.
Either they have done little parts here and there or stopped all together.

Peter Ostrum who played Charlie Bucket in Willy Wonka & the Chocolate Factory. That was his only movie. I know he's a veterinarian now.
Not to mention the others 4 "brats" in that movie. I know the girl who played Violet is in insurance in Davenport, IA

Rebecca Lee Meza, who played the young Selena in the 1997 movie of the same name. According to imdb, that was her only screen role.

I think the English girl, Veruca (not sure of her real name) has continued to act into adulthood, but primarily in the UK. I don't think she's done anything that's well-known in the States.

Here's another one - Allan Hubbard, who played Tess Harper's son (and Robert Duvall's stepson) in the 1983 movie Tender Mercies. That was his only acting role, but he did appear in the "making of" featurette included on the DVD. He now teaches guitar to kids.

Weird, but I know somebody named Damian, who I've known over 20 years, and I still think of the Omen when I see him
Robert MacNaughton, who played the older brother in E.T. In his IMDB, it says that he works for the postal service in Phoenix.

Ashleigh Aston Moore who was on in Now and Then and Gold Diggers later went back to Canada and stopped acting and died at age 26 of pneumonia and bronchitis.

Matthew Garber who played "Michael" in Mary Poppins only appeared in 2 other films besides that one.
He died of hepatitis that spread to his pancreas at 22.

Katherine Healy played Mary Tyler Moore's daughter in the 1982 flick Six Weeks. That was her only film role - she quit acting to focus on her ballet and ice-skating career. She now coaches kids to dance, from what I've read.

Joshua and Daniel Shalikar only appeared in Honey, I Blew Up The Kid (1992) and the Walt Disney Attraction Honey, We Shrunk The Audience!.
According to IMDB they are currently college students in New Jersey.
Here's one I just remembered.
A young actress by the name of Mikki Allen starred alongside Harrison Ford in the drama Regarding Henry in 1991. Allen played Ford's pre-teen daughter. Good movie. If you haven't seen it, it's worth checking out.

Mara Wilson from Matilda, Mrs. Doubtfire, A Miracle on 34th Street, etc. I know that she was attending NYU but I think she may have graduated earlier this year. Always liked her in movies...I grew up on Matilda.

The original three kids from 3 Ninjas (1992) haven't done much else instead of appearing in the 3 Ninjas' movies and bit parts on television. All three haven't acted since the mid-1990s.
Following information is from IMDB:
- The eldest son 'Rocky' (Michael Treanor)- Studied computer science at university and now resides in Woodland Hills, California. He also did a stint as a barman in a Malibu club.
Was discovered by a casting agent looking around martial arts schools for kids to be in the movie. Acting was not the lifestyle he wanted so after appearing in a second 3 Ninjas movie, 3 Ninjas Knuckle Up (1995), he left the business.
- The middle son 'Colt' (Max Elliot Slade) - Has appeared in three of the four 3 Ninjas movies.
Stepping off the high-budget film set of Apollo 13 (1995), Max took on the final role of his child acting career in an independent action film entitled The Sweeper (1996) (V).
At the age of fifteen, Max decided to take an extended leave-of-absence from the acting business in order to focus on school, going on to earn a B.A. in anthropology from USC.
He currently teaches yoga in Pasadena, California.
The youngest son 'Tum Tum' (Chad Power) - Along with Michael Treanor only appeared in the original and Knuckle Up.
His current wheareabouts are not listed. His last screen role was a 1995 episode of Step by Step.

Bobby Fite did not have as much of a successful career as his two co-stars of the 1985 family sci-fi movie Explorers; the other two being Ethan Hawke and River Phoenix.
After the movie he did a brief run on Silver Spoons with his last appearance being on an episode of Walker, Texas Ranger in 1994.
According to IMDB he is currently a home developer living in Dallas, Texas.

I'm mentioning this because I played this a lot as a kid and other celebrities appeared in it...
In the 1996 live-action CD-ROM game Escape From Horrorland the girl in the game, Tatum Fjersted, only appeared in this and her current whereabouts are unknown.
The other two boys here are Eric Lloyd from The Santa Clause movies and Adam Wylie who appeared in lots of movies and tv shows as a kid.
Other stars who appeared in this were Jeff Goldblum, Isabella Rossellinni, and Judy Tenuta.

Milton Davis Jr. who played J.P. in the 1994 version of Angels in the Outfield only appeared in one movie after Angels in the Outfield which was Mad City in 1997 in a small part.

Denise Nickerson played Violet. She was also a regular on Dark Shadows for a long time.
Both girls from The Parent Trap 2, Carrie Kei Heim and Bridgette Andersen. Heim had a big hit with the movie Santa Claus and Andersen had Savannah Smiles. Heim went to law school and is now married with a daughter. Andersen died of a drug overdose at the age of 21.

Cammie King became well-known in film history for playing Scarlett and Rhett's daughter, Bonnie Blue, in Gone With the Wind. She also had a bit part in a Blondie movie and did a voiceover in Bambi. That was it, though I understand she still does memorabilia shows and the like.
No one knows what happened to Leslie Ann Powers, who played the role of Penny Pingleton in Hairspray. John Waters and Ricki Lake have both said they'd like to see her again, but she seems to have dropped off the face of the planet.

While several of the child stars of Troop Beverly Hills made it big in show biz as adults (Kellie Martin, Carla Gugino, Jenny Lewis), most of the other girls dropped out of acting. Last I heard, Ami Foster (who was also in Punky Brewster) is now a full-time mom, as is Heather Hopper (who was also in Good Morning, Miss Bliss). Emily Schulman (also of Small Wonder and Christy, the latter reuniting her with Kellie Martin) is now a talent agent in LA. Aquilina Soriano and Tasha Scott, I have no idea. One of the girls from a rival troop did make it big - her name is Tori Spelling.

Many of the kids who appeared in the 1995 Disney comedy Heavy Weights either only appeared in that movie or have only done little bit parts since and haven't acted in years.
Some exceptions are Kenan Thompson and Aaron Schwartz who has recently made a comeback on the show Gossip Girl after not appearing in anything since the movie.

The kids on "The Little Rascals" appeared in a few movies and TV shows after the movie but have not appeared in anything relevant in years. The only one I can remember seeing recently was Bug Hall (Alfalfa), who was in the Disney movie "Get A Clue" a few years ago.

A lot of the "Rascals" from the 1994 movie appeared in a lot of tv shows throughout the 1990s in bit parts. A few only appeared in that movie and others have a pretty long tv resume.
Some of them went on to voice-acting; one kid went on to the Disney cartoon Recess.
Bug Hall was just in one of the American Pie direct-to-video sequels Book of Love.

Update on Allan Hubbard - he is still a musician and guitar instructor, and he is also the Associate Pastor at Mt. Olive Baptist Church in Paris, TX. Here's his bio from the church website:

The Bad News Bears '76
Gary Lee Cavagnaro who played Engelberg only did 2 more things after Bears(he didn't even return for the sequels)
Alfred Lutter III who played Ogilvie(and he also played Tommy in Alice Doesn't Live Here Anymore) The Bad News Bears in Breaking Training '77 was his last film.
Jaime Escobedo who played Jose, only appeared in this, and the sequel- Breaking Training
David Pollock who played Rudi Stein did a few other appearances but vanished after the final sequel- Goes To Japan
Michael Quinn Smith who played Lupus only did the first two Bears movies, and his only other film appearance is an uncredited role in Public Enemies.
David Stambaugh who played Toby Whitewood, didn't do anything after the final sequel- Goes To Japan
Jeffrey Louis Starr who played Engelberg in the sequels never did anything else.
Little bit of trivia- Brett Marx who played Jimmy Feldman in all three films is Gummo Marx's grandson.

I Saw What You Did '65
The two lead girls Sara Lane and Andi Garrett- this was their only film appearance. Andi Garrett's last credit was a TV appearance in '77.
The World of Henry Orient '64
Merrie Spaeth and Tippy Walker, neither did much after this- Spaeth's last appearance was on TV in '65, Walker's '72.
I'm glad this thread was brought back up, because I saw a movie the other night featurng a young actress with only one film to her credit.
Little Miss Marker (1980) starring Walter Matthau and Julie Andrews featured a young actress named Sara Stimson who charms everyone in sight.
According to IMDB, this is the only film in Miss Stimson's very short filmography.

Gary Lee Cavagnaro who played Engelberg only did 2 more things after Bears(he didn't even return for the sequels)
Alfred Lutter III who played Ogilvie(and he also played Tommy in Alice Doesn't Live Here Anymore) The Bad News Bears in Breaking Training '77 was his last film.
Jaime Escobedo who played Jose, only appeared in this, and the sequel- Breaking Training
David Pollock who played Rudi Stein did a few other appearances but vanished after the final sequel- Goes To Japan
Michael Quinn Smith who played Lupus only did the first two Bears movies, and his only other film appearance is an uncredited role in Public Enemies.
David Stambaugh who played Toby Whitewood, didn't do anything after the final sequel- Goes To Japan
Jeffrey Louis Starr who played Engelberg in the sequels never did anything else.
Little bit of trivia- Brett Marx who played Jimmy Feldman in all three films is Gummo Marx's grandson.

I wonder if it was a chemistry thing- he was great in the movie, but maybe he just didn't have the same chemistry with Lavin.

Of course the main reason for this is the 3 directors hired non-professional actors.

Jennifer Banko started out in Friday the 13th Part VII: The New Blood (1988) and in Leatherface: Texas Chainsaw Massacre III (1990).
Throughout the 90s she has appeared in bit parts on popular shows at the time with her last screen credit being a 1997 episode of "413 Hope St."
All that is known currently is that she now "works in education and continues to promote charity causes."

Will Sandin, who played 6 year old Michael Myers in Halloween (1978), appeared in nothing else.
In recent years he has joined the Halloween / horror convention circuit.
Jeffrey Landman, who played 'Billy' in Halloween 5: The Revenge of Michael Myers (1989), appeared in nothing else.
In recent years he too has joined the Halloween / horror convention circuit and has participated in a couple of Halloween documentaries.
Devin Gardner, who played 'Danny Strode' in Halloween: The Curse of Michael Myers (1995), only appeared in one other thing; A Kid Called Danger (1999).
It is unknown what he is up to in recent years.

I mentioned this first one in another thread a few days ago.
Carrie Henn appeared as Newt in Aliens and quit the biz shortly after.
Jake Lloyd appeared in a handful of movies and TV shows before starring in Star Wars Epsiode 1 The Phantom Menace as young Annakin Skywalker.
To this day, he has never appeared in anything else, and according to the IMDB is currently a college student in Chicago.
After seeing The Phantom Menace, I understand why he never appeared in anything else.
But I blame George Lucas for that -- Anakin should never have been a little kid in a Star Wars movie, much less a Star Wars movie that really stunk.

Julia Winter who played 'Veruca Salt' in Charlie and the Chocolate Factory (2005) has never appeared in anything else.
The other movie kids have appeared on film/tv before and after Charlie.

That's Justin Henry. He hasn't really "disappeared" he just hasn't been in anything big; he still acts.
His most recent role was in an episode of "Brothers & Sisters".

Twins Joseph and Christian Cousins were mostly in the same movies and tv shows throughout their childhood acting careers.
Their movies were Kindergarten Cop (1990), Critters 3 (1991), and Twin Sitters (1994).
On tv they had a few bit parts but are mostly known for their stint on "Knots Landing" as 'Bobby Ewing'.
They haven't acted since the 1997 mini-series "Knots Landing: Back to the Cul-de-Sac" and it is unknown what they are doing today.

She lives out of the spotlight but ocassionally appears in public supporting her family at their public events.

He then turned to television and went on to brief stints in "Together We Stand" and "Head of the Class".
As an adult he then went into behind-the-scenes work and became a stunt coordinator for The X-Men (2000) and Jet Li's The One (2001).
His most recent acting gig was a role in the film Second Time Around (2002) and he has participated in a few "Making-of Indiana Jones" documentaries.

The three kid contestants on the game show featured in the film Magnolia (1999) haven't done much since the movie came out.
1. Bobby Brewer who played the chubby kid 'Richard' was in television bit-parts throughout most of his career; "Malcolm in the Middle", "The Guardian", "Frasier", "Buffy the Vampire Slayer".
His most recent role was a 2006 indie movie The Standard.
2. The girl of the group, Natalie Marston as 'Julia', did the direct-to-video Beethoven's 4th (2001) and recently did a "Criminal Minds" episode in 2009.
3. The "main kid" Jeremy Blackman as 'Stanley' went on to an episode of "Law & Order" and "Law & Order: Criminal Intent" (in different roles).
He has an indie movie called 0s & 1s currently in production.

The kids from the original Beethoven movies, Beethoven (1992) and Beethoven's 2nd (1993), seem to have disappeared.
The youngest daugher 'Emily', played by Sarah Rose Karr, was in Kindergarten Cop, Father of the Bride, the two theatrical Beethoven's, and her last screen role was a television movie called The Four Diamonds in 1995.
It is unknown what she is doing in recent years but it seems that she has moved on from acting. According to unconfirmed reports from people on IMDB claiming to have known her, she graduated from college and is working for a company on the East Coast as a mathematician.
The boy of the family 'Ted', played by Christopher Castile, is most known for his role on the sitcom "Step by Step" which ran from 1991-1998.
He hasn't acted on film since "Step by Step" went off of the air.
As of 2004, he was doing voice-acting for the Focus on the Family radio program "Adventures in Odyssey".
The eldest daughter 'Ryce', played by Nicholle Tom, is the only one who has kept up with a steady acting career. She is perhaps most known for her role on the sitcom "The Nanny" which ran from 1993-1999.
In recent years she has done mainly television bit parts in shows like "Burn Notice", "Without a Trace", "Cold Case", "The Mentalist", and her most recent role was a 2010 episode of "Castle".

Many of the kids in 1991's Hook (Robin Williams' kids and The Lost Boys) faded into obscurity after the movie came out.
They either left acting or went into television bit-parts that eventually ended.

Mickey Hays' story is a little different than most child actors, but he still only appeared in one movie...
Mickey Hays was born with a rare genetic disease called Progeria that causes advanced pre-mature aging and those that have it do not live very long.
One of his last wishes was to appear in "a real Hollywood movie" so through the Make-A-Wish Foundation it was arranged for him to appear as a "Spaceman" in the 1986 Jack Elam film The Aurora Encounter.
After the movie Mickey Hays went back to his regular life and he appeared in a few documentaries to bring awareness to Progeria.
He died in 1992 at age 20.

Ty Hillman, who played Robert Redford's nephew in The Horse Whisperer (1998), hasn't done much since the movie came out; only appearing in one episode of "Home Improvement" and "Stephen King's Dead Zone".
The other child actors in the movie, Scarlett Johansson and Kate Bosworth, went on to successful careers.

Yeh someone mentioned the kid in Kramer VS Karmer. It was Justin Henry who was also in Sixteen Candles. He played Molly Ringwalds smart mouth younger brother. But here is the thing, he still does movies from time to time. His last one was in 2010. Check it out in IMDB.
Peter Ostrum who played Charlie Bucket in Willy Wonka & the Chocolate Factory. That was his only movie. I know he's a veterinarian now.
Not to mention the others 4 "brats" in that movie. I know the girl who played Violet is in insurance in Davenport, IA
Denise Nickerson :) She was on "Dark Shadows" before Willy Wonka. She still does appearances for both shows. I'm going to meet her next month :D

I think the English girl, Veruca (not sure of her real name) has continued to act into adulthood, but primarily in the UK. I don't think she's done anything that's well-known in the States.
I heard all 5 children in "Willy Wonka" have done the commentary on the DVD itself, and here are their new careers....
Michael Bollner (Agustus Gloop) is a German Tax Accountant in Munich.
Julie Dawn Cole (Veruca Salt) is a mother of two.
Denise Nickerson (Violet Beauregarde) is an Accountant in Denver.
Paris Themmen (Mike Teevee) is still talking about his "Willy Wonka" years.
Peter Ostrum (Charlie Bucket) is a Veternarian, but all 5 have time to sign autographs when there's a convention about the film.
