not "actor", but I believe Whoopi Goldberg losing Best Actress in 1985 for The Color Purple is one of the biggest snubs in Oscar history. I've read articles that even argue that her Supporting Actress win for Ghost (which she was great in no doubt, but doesn't come close to the complexity and demands that The Color Purple expected from her) was a compensation prize for admitting that she deserved the Oscar five years earlier. The scene in the kitchen alone should've gotten Whoopi that Oscar.

Off the top of my head...
Joaquim Phoenix for "Walk The Line"
Audrey Hepburn for "The Nun's Story", "Wait Until Dark", "My Fair Lady" (or at least a Nom for "MFL")
Sandra Bullock for "Hope Floats" (at least a Nom)

I had forgotten about Johnny Depp; he was great in the first "Pirates" movie.
