 I do love pistachios. I know what you mean, you can't eat just ONE!
No kidding Irene. You just have to be careful to stay away from the red ones because they stain the fingers. I think Sunkist has the best ones...so plump, and very few clunkers aka those ones that won't open, lol.

If you recall some of my posts, you know I love salt. Well, I love the pistachios that are salted! I know, I know, but I can't help it. You know, I actually do love the red ones, but the color doesn't make a bit of difference in taste, but they sure do leave your hands looking very red!:o

Oh God, I hate the ones that won't open. As a matter of fact, if a pistachio is closed, I don't touch it. It has to be slightly open for me to even consider it.

I know all about you and salt, lol. Just as long as you have your blood pressure monitored, that shouldn't be a problem. As for the nuts that won't open, I hear you on that. My husband, on the other hand, tries to pry them open with his teeth. I flip because he can break a tooth. I tell him that a pistachio nut isn't worth a dental bill in the hundred$. Even with our dental insurance, you know how it is with deductibles and co-pays. That's why I like Sunkist brand. There really are very few clunkers.

Yes ma'am, I will take care of the salt thingy. I hear you and everyone else on that. ;)

Yeah, the very reason you just stated abt Lou and teeth is the very reason I won't crack those suckers. To me, it is like trying to crack open a small coconut. I don't want to take the chance that I may crack my molar or something. My father paid a zillion dollars for my teeth, I need to take care of them and make them last forever. :D Just give me an open pistachio and I am happy.

I used to make this delicious pistachio nut pie. I don't remember it offhand, but it was something like ground pistachio nuts (that's when you want them deshelled), butter, flour, cinnamon. Mix it together, and press it firmly into a pie dish. Bake it until it's lightly brown.
After it cools, you add prepared pistachio pudding (or cheescake filling) on top of the crust. Top it with whipped cream and refrigerate it. Delicious. :happyface

ahh, well, a stir fry is relatively EZ to do...you just need a wok , a tablespoon of oil with a couple shakes of soya sauce in it, some marinated meat strips
and fresh cut cold veggies of your choice.........you get the oil hot, then turn the heat down to 1/2-3/4 flame ( depending on your cooktop ), cook the meat strips ( While stirring and tossing constantly ) for 4-5 mins, then, add the veggies and stir / toss for approx 3-5 mins until cooked through ( al-dente is prefered ), then serve on a bed of rice (You can buy boxed microwave rice to save time)

Exactly, and her school is about 30 mins from where I work so I leave about 45 mins before her class is over with. I would hate for her to be the last kid picked up  So I drop her off at day care and then I go back to work.

Just about the same thing I had yesterday for Dinner. There's nothing wrong with pork just as long as you don't eat it every day. Like you I try to stick with chicken and turkey, but eating the same damn thing every day just cooked different gets old to me.

I know, I know. It does get tiring and definitely OLD! I craved Pork Chops today and I was fighting the craving, but I caved in. I try to look for different recipes and alternatives to chicken, such as you said, turkey. I even try to avoid meat and just make some vegetables, rice and salad.

There was a time I used cheese a lot to make things such as Cheese Enchiladas, but even cheese is not good for you if you use it a lot. But, like you said, in limited quantity it is ok, just can't over do it.
