Welcome to the forum SeinfeldFanMH.
Q 1: Yes, there is a bunch of trivia (mostly behinds the scene stuff) for each ep. It is not a game.
Go to the episode, and on the options for that episode, it’s the Notes About Nothing feature, turn that on and your set. Its trivia through the whole episode presented in text at the bottom of the screen like subtitles (kind of feels like VH1’s “Pop-Up Video” thing).
Q 2: In general, the syndicated versions have a minute or 2 cut out of them usually for additional commercial/ad time. Common for syndicated versions of earlier eps to cut out some of the stand up (early eps contained more bits of Jer doing stand up. Just nice to have them as they were made
Q 3: 012 The Revenge; I haven’t even checked the variations on that one yet, I should watch that one.
The big difference on The Revenge is the different actors doing the Newman character's voice. Newman is heard, but unseen in the ep, and originally the Newman voice is done by show co-creator Larry David (trivia: one of LD’s many cameo appearances in the series), but after actor Wayne Knight assumed the recurring role of Newman, the scenes in The Revenge were re-shot (or re-dubbed) with Knight’s voice instead of LD’s for syndication.

The one we’re waiting to see the 2 versions on is season six’s 062 The Handicap Spot.
In its original form it features actor John Randolph in his one appearance as Frank Costanza. Those scenes were re-shot with Jerry Stiller as Frank C. for syndication in the USA.
Jerry Stiller actually took over the role starting with season 7, 064 The Puffy Shirt.
A site like this => The News Guy (http://membres.lycos.fr/tnguym/index.html) has a bunch of that info on the epsiode guide or script pages.

Actually The Handicap Spot was in season 4, not season 6, so we should get to see Mr. Randolph's performance in the next DVD set. The Puffy Shirt appeared in season 5, not 7.
